In this installment of our Simple Recipes series, we are exploring the culinary utility of 2022 Action. While some wines are designed strictly for the glass, the structural integrity and bold profile of Action make it a formidable variable in the kitchen—specifically when used as a deglazing agent for a rich, savory reduction.
These cocktail meatballs are a study in balance: the fat of the pork and beef is cut by the acidity of the wine, resulting in a sophisticated appetizer that feels both classic and intentional.
Yield: Approx 30 – 1″ meatballs
1. In a large bowl, combine the ground beef, ground pork, bread crumbs, Parmesan cheese, eggs, minced garlic, parsley, salt, and pepper. Mix until well combined.
2. Form mixture into meatballs, about 1″ in diameter.
3. Heat olive oil in a large skillet over medium heat. Add the meatballs and brown on all sides. Transfer meatballs to a plate and set aside.
4. In the same skillet, add the chopped onion and sauté until translucent.
5. Pour ST Action into the pan and deglaze the pan, scraping the browned bits from the bottom of the skillet. Simmer for about 5 minutes to reduce down wine slightly.
6. Stir in the beef broth, crushed tomatoes, tomato paste, sugar, oregano and basil. Bring mixture to a simmer.
7. Return meatballs to the skillet, ensuring they are submerged in the sauce. Cover the skillet and let meatballs braise on a low heat for about 30 minutes, or until they are cooked through and tender.
8. Adjust seasonings with additional salt and pepper if needed. Serve meatballs in a chafing dish, casserole dish or spear with toothpicks to serve as a passed hors d’oeuvre. Can be served as an hors d’oeuvre on sliced crostini or with them on the side.
Serve the meatballs with a generous spoonful of the reduction and a final dusting of Parmesan cheese.
Naturally, we recommend serving these alongside a glass of the remaining 2022 Action. The wine’s notes will mirror the savory depth of the sauce, creating a perfect sensory loop.
